Eggplant this week

We started picking beautiful heirloom eggplant today. They’re in the cooler for $1.00 each or $4.00 per bag for baby eggplant.
We also have medium zucchini – $1.00 each
Cylindra Beets – $3.00 per bunch
Green beans – $4.00 per bag
Cour Di Bue green cabbage $2.00 per head
Garlic Scapes – $2.00 per bunch
Fresh herbs – $1.00 per snack size bag
Eggs from our pasture raised and organically fed hens – $5.00 per dz.

We also have frozen chicken and stone ground heirloom cornmeal available on request.

The red hollyhocks started on their own as one plant 3 years ago and purple clematis was planted by Bill’s mom years ago. They make a beautiful combination.

We moved all the plants in the nightshade family (potatoes, peppers, eggplant and tomatoes)  to a new location this year in an effort to avoid disease. They seem pretty happy in their new home.

Yellow beets and red beets

Yellow beets at the bottom of the picture and red beets at the top. This shows why we need to charge more for yellow beets.

Beets are looking lovely, garlic is almost ready, cabbage is done, squash is just starting to vine and volunteer dill is “hiding” the squash from the bugs (we hope).

Garlic Scape Pesto

GARLIC SCAPE AND ALMOND PESTO

Makes about 1 cup

10 garlic scapes, finely chopped

1/3 to 1/2 cup finely grated Parmesan (to taste and texture)

1/3 cup slivered almonds (you could toast them lightly, if you’d like) You can also use walnuts or the more traditional (and also more expensive) Pine Nuts.

About 1/2 cup olive oil

Sea salt

Cut off the flower head at the top end of the scape any snap off the fibrous end at its natural breaking point. Discard tops and bottoms and cut remaining scape into 1″ chunks. Put the chopped scapes in the bowl of a food processor and process till finely chopped. You can also mince them with a knife. Add 1/3 cup of the cheese, almonds and half the olive oil. Process to blend all the ingredients and then add the remainder of the oil and, if you want, more cheese.  If you like the texture, stop; if you’d like it a little thinner, add some more oil.  Season with salt.

If you’re not going to use the pesto immediately, press a piece of plastic against the surface to keep it from oxidizing. The pesto can be stored in the refrigerator for a couple of days or packed airtight and frozen for a couple of months, by which time tomatoes should be at their juciest.

Use on pasta, as a dip for bread or mixed with butter as a spread for garlic bread.

Garlic Scapes are ready!

Garlic scapes are the stem and flower bud of a hard neck garlic plant. They have a very short season as each plant only grows one. They have a mild garlic flavor and are not hot like the garlic bulb. Our favorite way to use them is minced and mixed with butter for garlic bread (best garlic bread ever!), pasta, rice or vegetables or even scrambled eggs.  They also make a great pesto. The recipe I use is listed under “Recipes from Pam”.
They are in the cooler for $2.00 per bunch (about 1/2 lb.)

3 French Hens Market

We’re all set up for the market in Morris and it looks like a beautiful day. We are selling baby kale, leaf lettuce, red cabbage, Cour Di Bue cabbage, herb plants, alpaca bird nest ball kits and Suri alpaca yarn. Everything we sell is raised by us at our farm in Minooka using organic practices.

Heirloom Corn

This is our heirloom yellow dent corn, black oil sunflowers and Floriani Red flint corn. They’re planted in our back field that is bordered on the south and east by trees and a creek and on the north and west by grass hay and prairie grass. This protects the heirloom corn from being cross pollinated by other corn planted in the area. The yellow dent is the corn we used for cornmeal this year. This fall we will use it and also the Floriani for corn meal. We also plan to use the Floriani and the sunflower seed as feed for the hens. The Floriani is higher in protein than other varieties of corn. Combining it with the sunflowers will allow us to eliminate soy from their diet. It will also give us a truly local feed for our local eggs!

Chicken Processing Day

On our way to Arthur IL for chicken processing. We pulled out of the drive @ 3:15 am and will hopefully be home by 6:00 tonight. If you have pre-ordered and plan to pick up tomorrow, we will be available from 8 until 3. Also, if you only wanted a couple of chickens and didn’t pre-order, you can still stop by between those times tomorrow. Lettuce Lovers Rejoice!

We are picking lots of beautiful and delicious lettuce. Now is the perfect season for really good lettuce as it is a cool season crop. We don’t grow much in the heat of summer because we feel it looses it’s sweetness. So, if you are looking for lettuce – now is the time! We have it washed (3 times), spun, bagged and in the cooler for $3.00 per bag.

Chicken Orders

Our pasture raised, organically fed chicken will be available on June 7th.

We will have chicken available 2 times this summer. The 1st will be on June 7th and the 2nd some time in August. We offer them as a whole chicken or a cut-up chicken for $4.00 per lb. The charge for cutting them is .60 per chicken. If you want more than 5, you can reserve them. We need your name, phone # or e-mail address, qty. and how you want them and a $5.00 per chicken deposit. You can either send it in the mail or drop it in the drop-box in the stand at our farm. If you want fewer than 5, you can contact us any time after the processing date and set a time to come out.

Back inside for the meat chickens!

The meat chickens are now back in their big shelter with 2 heat lamps and fresh straw. They were not enjoying their portable shelter with wet grass, only 1 lamp and no solid walls. Hopefully things will warm up and dry out enough to bring them back out soon!

First 3 French Hens Market of the season

Tomorrow is the first 3 French Hens Market of the season in Morris. It’s a great market and it looks like the weather will be beautiful. We will be in the same spot as last year. We will have fresh rhubarb and Pink Beauty radishes, pansy, basil and Rosemary plants, pussy willow branches, Cowsmo compost and some fiber products (yarn, dyed locks, nest ball kits) from our alpacas.

Floriani Red Flint Corn

Today’s we planted our Floriani Red Flint corn. It’s a high protein Italian heirloom corn that we will grind into cornmeal. We will also use some of it to feed our chickens. Our plan is to eliminate the soy in their diet by using this high protein corn.

We also planted our heirloom yellow cornmeal corn that we used for this years cornmeal. We still have a small amount left. When it’s gone, we won’t have it again until late fall. We do not put it in the stand, so if you would like some, you can e-mail me @ pam@creeksidenaturalfarm.com
It’s $5.00 for a 2 lb bag.

Happy Birthday Apollo!

A year ago today he made his way into the world a few hours before the other alpacas were due to be loaded into the trailer for a ride down to M2AFarm for shearing. Tomorrow he will be going for his first shearing.
