Coffee House Corn Muffins

 

1 1/4 C. CreeksideNatural Farm stone ground heirloom corn meal

1 C. all purpose flour

1/3 C. sugar

1/3 C. brown sugar

1 tsp. baking soda

1/2 tsp. salt

1 egg

1 C. buttermilk

3/4 C. vegetable oil

Preheat oven to 425 degrees

Mix all dry ingredients in a large  bowl.  Mix egg, butermilk and oil in a small bowl. Add wet ingredients to dry and stir just until mixed.  Fill 12 muffin cups.  Bake 12-15 minutes.
